My Thoughts

These sweet, smokey, and creamy baked beans pack just the smallest bite of heat. They are perfect for a summer barbecue, or a random Wednesday night's dinner.

The How To Do It

  1. Dice the half onion and mince the garlic cloves.
  2. In a medium-sized sauce pan, heat the olive oil over medium/high heat.
  3. Add roughly half of the onions and saute for 3-5 minutes, or until they start turning translucent and soften.
  4. Add the garlic and saute for another 2-3 minutes.
  5. Reduce the heat to medium/medium-low and add the black beans, half the cilantro, barbecue sauce, and salt.
  6. Combine everything thoroughly and let it simmer for 15-20 minutes.
  7. Add the rest of the onions and let simmer for another 5-10 minutes.
  8. Remove them from the heat and either place them in a serving bowl (pictured) or go ahead and plate them.
  9. Sprinkle on the cotija cheese and cilantro.
