These little cheese crackers are a really quick and easy easy (and did I mention tasty!) appetizer. They also make a wonderful topping for a nice green salad. Think of it as the cheese and croutons rolled into one.

The How To Do It
Preheat the oven to 425°.
Grate the Parmesan and place it into a medium sized mixing bowl.
Mince the lemon basil (if you do not have lemon basil use 4 tablespoons of sweet basil and 1 tablespoon of lemon zest) and add it to the bowl.
Mix the basil and cheese together.
Once everything is mixed thoroughly, place a heaping tablespoon of the mixture on a baking sheet lined with either parchment paper or a silicone mat (for best results use the silicone mat ... trust me on this one). Continue to do this until you've placed all the mixture on the baking sheet. Make sure you leave enough room for them to melt and spread out. I usually have to do multiple batches.
Bake for 4-5 minutes (may be less, maybe more depending on your oven). You want them to spread out into thin wafers and to get slightly browned.
Let them cool and then with a really thin, flexible spatula (I use a fish spatula) remove them from the baking sheet.
