Zucchini and Yellow Squash Slaw with Mint and Basil in a Champagne Vinegar Dressing

Let's face it, it's that time of the summer where you're desperate to find something different to do with all the fresh squash that just keeps coming into from the garden. You've already ran out of unsuspecting victims - I mean neighbors - to give them to. You've fried so many that your kitchen may permanently smell of frying oil and cornmeal. There's got to be something else to do with them and there is!

Squash slaw! Never heard of it? Nope, got the idea after reading a menu online. Hadn't tried it but we had the squash to spare. I have no idea if this is what they were serving (we didn't eat there), but it is crazy tasty on a hot summer day. This is a light and side for those days when the humidity hits you like a hot wet towel and you don't want to even think about turning on the stove (yup, no cooking in this one!). The vinegar is bright and sweet, the mint and basil work together to add to cooling effect of and let the flavor of the squash and zucchini come shining though.

The How To Do It

  1. Thinly slice the zucchini and squash into planks. Make them as thin as possible. You're trying to make something roughly the width of a matchstick.
  2. Next, cut the zucchini and squash into sticks, trying to make each one the same width as you did before. Again, the end result should resemble a matchstick.
  3. Mince the mint and basil.
  4. In a small bowl whisk the champagne vinegar, salt, pepper, onion granules, garlic granules, mint, and basil together.
  5. Transfer the zucchini and squash into a medium sized bowl and drizzle the vinegar mixture over it. Depending on how large the zucchini and squash were (or how many you used) you may not need to use the entire bowl of dressing.
  6. Toss to coat the vegetables and place back into the refrigerator for 15-20 minutes.
